  • Christmas Fruits and Scoops Wreath

    CHRISTMAS FRUITS AND SCOOPS WREATH

    Serves: 4 - 5 pax | Preparation Time: 25 mins

    INGREDIENTS

    5 tablespoons chia seeds – pre-soaked and set aside

    1 sprig mint leaves; crushed

    1 tub gourmet strawberry ice cream

    250g blueberries
    250g blackberries

    250g raspberries

    400g strawberries

    150g redcurrants
    4 figs – sliced into 6

    1kg pure Greek yoghurt

    1 tablespoon 22k gold dust powder

    10 pieces of Tesco Finest cheese cookies

    METHOD
    1. Mix chia seeds with Greek yoghurt evenly.

    2. Prepare a serving platter, spread chia seed yoghurt evenly with a cake spatula.

    3. Spread berries, figs and mint leaves, and top with ice cream.
    4. Sprinkle gold dust and crushed cheese cookies, and serve.

  • Prosecco Party Cocktail

    PROSECCO PARTY COCKTAIL

    Serves: 4 pax | Preparation Time: 20 mins | Cooking Time: 10 mins

     

    INGREDIENTS

    1 bottle Prosecco

    4 tablespoons thick strawberry syrup

    4 teaspoons freshly squeezed lemon juice
    1 sparkling apple soda

    6 – 8 sprigs rosemary

    A handful of fresh cranberry fruit

    0.5 cup sugar

    1 cup water

    4 jolly candy canes

     

    METHOD

    1. Add 1 cup of water to a small pan with 2-3 sprigs of rosemary and bring to a boil.

    2. Add 0.5 cup of sugar to boiling water and stir until sugar dissolves.

    3. Remove from heat and strain the rosemary leaves and set to cool.

    4. Add 1 tablespoon of thick strawberry syrup into each cocktail glass.

    5. Pour Prosecco evenly into the glasses.

    6. Add 0.5 ounces of rosemary simple syrup (step 3), 1 teaspoon of lemon juice, 1 ounce of sparkling apple soda to each glass.

    7. Add cranberries to each glass.

    8. Garnish with 1 sprig of rosemary and jolly candy cane.

  • Mini Christmas Cakes

    MINI CHRISTMAS CAKES

    Serves: 12 | Preparation Time: 35 mins | Cooking Time: 30 mins

    CAKE TOPPINGS

    INGREDIENTS

    150g redcurrants

    150g blueberries
    250g sugar

    2 tablespoons 22k gold dust
    Icing sugar (optional)

    100g whipped cream

    METHOD
    1. Using low even heat, keep stirring and boil sugar until dissolved.
    2. Pull a sugar brush stroke with a spoon drawn through on silicon parchment paper. Let it cool and remove.
    3. Brush cooled down caramelised sugar with a dash of gold dust and set aside.
    4. Pour whipped cream into a bowl and whip until it forms a soft peak. Store in refrigerator.

     

    CAKE BASE

    INGREDIENTS
    24 muffin cups
    1 cup hot water

    1 teaspoon instant espresso powder
    1 cup cocoa powder

    3/4 cup heavy cream

    3 cups plain flour – sieved
    1 teaspoon baking powder

    1 teaspoon baking soda

    1/4 teaspoon salt
    1½ cup (3 sticks) butter, softened

    2¼ cup sugar

    4 eggs

     

    METHOD
    5. Using low even heat, keep stirring and boil sugar until dissolved.
    6. Place the instant espresso powder and cocoa powder in mixing bowl and whisk over hot water until smooth. Add heavy cream and whisk until smooth. Set aside.
    7. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Sieve the mixture and set aside.
    8. Iin the bowl of a stand mixer, beat together the butter and sugar until light and fluffy. Add the eggs, one at a time, beat well.

    9. Add mixture (step 7), then pour in liquid cocoa mixture (step 6), and mix well.
    10. Pour batter into muffin cups, 2/3 full.
    11. Bake in preheated oven for 14-16 mins, or until top part springs back when touched. Cool on a wire rack.
    12. Remove cakes from muffin cups and cut the domed tops off with a serrated knife to level.

     

     

    GANACHE

    INGREDIENTS
    2 cups chocolate chips or chopped chocolate (preferably 60% cacao)
    1 cup heavy whipped cream
    2 tablespoons butter, softened

    METHOD

    13. Pour the heavy whipped cream over the top of the chocolate chips in a microwave-safe bowl and microwave at 30 seconds interval, until the chocolate is melted.

    14. Whisk the heavy whipped cream and chocolate together until smooth and silky. Add the butter and whisk in until melted and smooth.

    15. Assemble 2 layers of cupcake, pipe in chilled whipped cream (step 4) between the layers.

    16. Pour a spoonful of ganache over the top of each cooled cake and smooth over the tops until the chocolate just drips over the edges. Place in the fridge and chill until ganache is firm.

    17. Top the cake with blueberries and redcurrants, and gold sugar stroke (step 3), sprinkle with icing sugar and serve chilled.
