This is marinated with the Spicy Hot Sauce (- especially popular in Chongqing, China. The sauce comprises of a mixture of Sichuan peppercorns, dried chilis peppers, chili powder and a variety of spices. Highly recommended to have this grilled in an oven on a tray to retain the juices and oils as they oozes out from the meat while grilling.
