A fish with an identity crisis. Despite its name, this species is neither a cod nor a ling. Rather, its a Pacific greenling.
Lingcod aren't pretty. With 18 sharp teeth, wide jaws and the fishy version of a beer belly, they're not easy on the eyes.
Regardless of their looks, they're a favourite in the Pacific Northwest for upscale fish and chips. The mild-tasting meat is tender yet firm, with large, soft, moist flakes.
(PS: Dont be alarmed by the blue-green tint of the raw meat. The colour cooks out completely, leaving a snow-white piece of fish)
