Chilled Grass-Fed Black Angus Beef Topside. Angus cattle are known for having genes that make its meat more tender, marbled and flavourful than regular beef. Raised on lush, green pastures. PREPARATION
Inside (topside) cut is great for stewing and braising. Slow roast, or if well-trimmed, sear then roast. Makes good casseroles but topside tends to dry so take care not to overcook. Good for stir-fry or shabu shabu when sliced.
