The green tea powder is directly added to the wheat flour and buckwheat flour before it is kneaded. The kneading action gently spreads the flavour through the soba. No dyes, additives, preservatives or flavour enhancers are used. The quality of the water used when kneading is very important. For these soba, spring water is drawn from deep underground near to the workshop, in Shizuoka Prefecture, near Mount Fuji. This is really beautiful and delicious Japanese noodle.
