Ingredients
1 whole Black Pomfret (degutted)
½ tsp Salt
½ tsp Sugar
1 tbsp Rice Flour
PINEAPPLE SALSA
80g Fresh Pineapple (diced)
⅓ Red Bell Pepper (diced)
½ small Red Onion (chopped)
1-2 stalks Coriander (chopped)
1½ tsp Sweet Chilli Sauce
A pinch of Salt
1 big Lime (juiced)
1 Chilli Padi (chopped)
Method
- Cut a few slits on both sides of the black pomfret (FairPrice staff can help you to do this). Rinse the fish and pat dry.
- Rub salt and sugar all over the black pomfret. Rub rice flour onto the fish, including the slits.
- Brush cooking oil onto the fish before air frying. Preheat air fryer to 180°C, place fish into air fryer and air fry about 20 minutes. Flip fish at the 10-minute mark. Increase to 200°C for the last 5 minutes.
- Combine all the ingredients for the pineapple salsa (chilli padi and lime juice can be adjusted to preference), set aside and serve with the air-fried black pomfret.
- Salsa can be prepared in advance and stored in the fridge for up to 3 days.
