Air-fried Black Pomfret with Pineapple Salsa

Ingredients

1 whole Black Pomfret (degutted)
½ tsp Salt
½ tsp Sugar
1 tbsp Rice Flour

PINEAPPLE SALSA
80g Fresh Pineapple (diced)
Red Bell Pepper (diced)
½ small Red Onion (chopped)
1-2 stalks Coriander (chopped)
1½ tsp Sweet Chilli Sauce
A pinch of Salt
1 big Lime (juiced)
1 Chilli Padi (chopped)

Method
  1. Cut a few slits on both sides of the black pomfret (FairPrice staff can help you to do this). Rinse the fish and pat dry.
  2. Rub salt and sugar all over the black pomfret. Rub rice flour onto the fish, including the slits.
  3. Brush cooking oil onto the fish before air frying. Preheat air fryer to 180°C, place fish into air fryer and air fry about 20 minutes. Flip fish at the 10-minute mark. Increase to 200°C for the last 5 minutes.
  4. Combine all the ingredients for the pineapple salsa (chilli padi and lime juice can be adjusted to preference), set aside and serve with the air-fried black pomfret.
  5. Salsa can be prepared in advance and stored in the fridge for up to 3 days.
