Air Fryer Lamb Chops with Chimichurri Sauce

Ingredients

Lamb Chop
600g Fresh rack of lamb (~8 chops)
3 tbsp Extra-virgin olive oil
2 tbsp Fresh rosemary, finely chopped
3 cloves Garlic, minced
1/4 tsp Salt
1/2 tsp Black pepper

Chimichurri Sauce
2 Red onion, finely chopped
2 Green chilli, finely chopped
8 Garlic cloves, finely chopped
1/2 cup Red wine vinegar
2 tsp Salt
1 cup Cilantro, finely chopped
1 cup Flat-leaf parsley, finely chopped
4 tbsp Fresh oregano, finely chopped
1/2 cup Extra-virgin olive oil

Method
  1. In a large bowl, combine olive oil, rosemary, garlic, salt and pepper. Add the lamb and gently toss to coat in marinade. Cover and marinate for up to two hours (overnight if possible).
  2. Preheat the air fryer at 180°C for 4 minutes. Spray air fryer basket/tray with oil spray and place lamb chops in a single layer, making sure not to overlap the meat.
  3. Air fry at 180°C for 8 minutes, flip and air fry for another 3 minutes, or to your preferred doneness.
  4. Combine onion, chilli, garlic, vinegar and salt in a medium bowl. Let sit for at least 10 minutes. Stir in cilantro, parsley, and oregano. Using a fork, whisk in oil.
  5. Plate up the lamb racks and drizzle chimichurri sauce over. Serve warm.
