Air-fried Cheese-Mayo Prawns

Ingredients

700g Jumbo Grey Prawns (around 15–16 pieces)
120g Mozzarella Cheese
Japanese Mayonnaise
A dash of cracked Black Pepper
2 stalks of fresh Parsley (minced finely)

Method
  1. Use a knife or pair of scissors to cut away the prawn’s legs, feelers and the sharp end of the tail. Snip open the prawn’s back and remove the veins. Ensure the back is open wide and flattened.
  2. Rinse the prawns and pat dry with a kitchen towel. Lay the prawns on baking paper.
  3. Squeeze Japanese mayonnaise on the open backs of the prawns.
  4. Spread mozzarella generously on top of the mayonnaise.
  5. Squeeze more mayonnaise on top of the mozzarella.
  6. Pre-heat air fryer to 180℃ for 5 mins. Air fry prawns for 5–7 mins till cheese melts and the tops are browned.
  7. Sprinkle chopped parsley and cracked black pepper onto the prawns before serving.
