Ingredients
580g Delicato Chuck Tender
1 Onion (chopped)
10 cloves Garlic (minced)
2 Green Chillies (slit lengthwise)
1 Red Chilli (slit lengthwise)
2 sprigs Thyme
2 Bay Leaves
2.5 tbsp Tomato Paste
3 tbsp Lime Juice
1 tbsp Cumin Powder
1 tbsp Brown Sugar
1 tbsp Dried Oregano
1 tbsp Chilli/Paprika Powder
1.5 cup Beef Broth
2 stalks Cilantro (chopped -for garnishing)
Salt (to taste)
Pepper (to taste)
Method
- Season the Delicato chuck tender beef with salt and pepper.
- Heat olive oil in a pot over medium-high heat. Once hot, sear the beef on all sides until browned. Remove the beef and set aside.
- In the same pot, sauté onion, garlic, green chilli and bay leaves until fragrant. Add the browned beef back to the pot, then stir in beef broth, tomato paste, lime juice, chilli powder, cumin powder, brown sugar, dried oregano, thyme and lastly browned beef. Mix everything together until well combined.
- Cover the pot, bring the liquid to a boil, then reduce the heat to low and simmer for 1.5–2 hours until the beef is tender and easily falls apart.
- Shred the beef with two forks. Garnish with chopped cilantro and lime. Enjoy with tacos or nachos!
