Braised Boneless Short Rib Paired with Mashed Potatoes

Ingredients

800g Delicato Boneless Short Ribs
1 Onion (diced)
5 clove Garlic (minced)
1 Tomato (peeled & chopped)
1 Carrot (cubed)
500ml Beef Stock
150ml White Wine
220g Tomato Paste
2 Bay Leaves
2 sprigs Thyme
30g Butter
30g Flour
20g Orange Peel (optional but recommended)
Salt & Black Pepper to taste
Olive Oil

Method
  1. Marinate the Delicato Boneless Short Ribs with salt and black pepper for 30 minutes.
  2. Dice the onion, mince the garlic, peel and chop the tomato, and slice the carrot.
  3. Cooking Instructions
    • In a large pot, heat the olive oil and butter over medium heat. Add the marinated Delicato Boneless Short Ribs and sear until browned on all sides. Remove the beef and set aside.
    • In the same pot, add more olive oil if needed. Sauté the diced onion and minced garlic until fragrant and translucent. Then, add the chopped tomato and cook until soft.
    • Add tomato paste, stir it in and cook for a few more minutes, allowing the flavours to meld.
    • Return the browned beef to the pot. Gradually sprinkle in the flour, stirring well to ensure it coats the beef and vegetables evenly.
    • Pour in the white wine and let it simmer until the alcohol evaporates and the aroma develops.
    • Toss in the bay leaves, orange peel and thyme. Pour in the beef stock, ensuring it just covers the ingredients.
    • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for at least 2 hours, allowing the flavours to deepen.
    • After 2 hours, add the carrots and continue to simmer for another 30 minutes. Season with salt to taste.
    • Once tender, serve the braised short ribs with buttery mashed potatoes.

  4. Easy Mashed Potatoes Recipe
    • Peel and quarter the potatoes, then place them in a pot of cold salted water.
    • Bring the pot to a boil and cook uncovered for about 15 minutes, or until the potatoes are fork-tender. Drain well.
    • Add the melted butter to the potatoes and start mashing. Gradually pour in the warm milk while mashing until you reach your desired consistency.
    • Add salt and pepper to taste. Serve hot and enjoy!
