Ingredients
500g Delicato Beef Shank
20g Ginger (sliced)
30g Shallots (bruised)
60g Garlic (bruised)
2 stalks Spring Onion
1 Bay Leaf
1 Tangerine Peel
1 Cinnamon Stick
2 Star Anise
5 Cardamom
500ml Water
SEASONING
¼ cup Light Soy Sauce
2 tbsp Oyster Sauce
½ tbsp Dark Soy Sauce
½ tbsp Dark Thick Sauce (for colouring)
¼ tsp White Pepper
2 tbsp Hua Tiao Wine
25g Rock Sugar
ORANGE MARMALADE SAUCE
½ cup Orange Juice
20g Honey
20ml Braised Beef Sauce
Method
- Wash and blanch the Delicato beef shank in boiling water for 5 minutes.
- In a pot, heat a little oil and sauté garlic, ginger, shallots and spring onions until fragrant. Add all the spices and cook for another minute.
- Add the beef shank, water and seasonings to the pot. Bring to a boil, then reduce the heat to low. Simmer for 1 to 1.5 hours, or until the beef reaches your desired tenderness.
- Remove the beef from the pot and let it cool before slicing.
- To make the sauce, combine orange juice, honey and beef broth in a pot. Cook until it slightly thickens.
- Serve the sliced beef shank with the orange marmalade sauce!
