Ingredients
320g, 1 whole Golden Pomfret
2 stalks Leek, cut into 1″ sections
2 tbsp Sichuan Preserved Vegetables
1 thumb-sized Ginger (shredded)
1 Red Chilli (sliced)
SEASONING
2 tbsp Soya Sauce
2 tbsp Chinese Cooking Wine
Method
- Rub fish with 1/2 tsp salt and pan fry on both sides for about 2 minutes each till light golden brown.
- Remove the fish and set it aside. Saute ginger, leek (white portion) and preserved vegetables till aromatic. Return fish to the pan.
- Add seasoning and 1 cup of hot water. Cover with lid and cook for about 5 minutes.
- Add in chilli and the remaining leek. Cook for another minute and serve.
