Braised Golden Pomfret with Leeks

Ingredients

320g, 1 whole Golden Pomfret
2 stalks Leek, cut into 1″ sections
2 tbsp Sichuan Preserved Vegetables
1 thumb-sized Ginger (shredded)
1 Red Chilli (sliced)

SEASONING
2 tbsp Soya Sauce
2 tbsp Chinese Cooking Wine

Method
  1. Rub fish with 1/2 tsp salt and pan fry on both sides for about 2 minutes each till light golden brown.
  2. Remove the fish and set it aside. Saute ginger, leek (white portion) and preserved vegetables till aromatic. Return fish to the pan.
  3. Add seasoning and 1 cup of hot water. Cover with lid and cook for about 5 minutes.
  4. Add in chilli and the remaining leek. Cook for another minute and serve.
