Ingredients
1 (500g – 600g) Seabass
1 tbsp Ginger (cut into strips)
1 Chilli (seeds removed, cut into strips)
½ cup Salted Vegetables (cut into strips)
2 Tomatoes (cut into wedges)
1 cup Water
1 tsp Fish Sauce
Few dashes Pepper
Cooking Oil to fry fish
Method
- Clean and gut the seabass.
- Rub and marinate the fish with salt and pepper.
- Heat some oil in a wok and pan-fry the seabass. Set the fish aside.
- Leave a tablespoon of oil in the wok. Fry ginger and chilli till fragrant. Add salted vegetables and fry for a while. Add tomatoes and fry till tomatoes soften.
- Add hot water and return the pan-fried seabass to the wok to simmer in the sauce.
- Season with fish sauce and pepper.
- Enjoy while it’s hot!
