Braised Seabass with Salted Vegetables and Tomatoes

Ingredients

1 (500g – 600g) Seabass
1 tbsp Ginger (cut into strips)
1 Chilli (seeds removed, cut into strips)
½ cup Salted Vegetables (cut into strips)
2 Tomatoes (cut into wedges)
1 cup Water
1 tsp Fish Sauce
Few dashes Pepper
Cooking Oil to fry fish

Method
  1. Clean and gut the seabass.
  2. Rub and marinate the fish with salt and pepper.
  3. Heat some oil in a wok and pan-fry the seabass. Set the fish aside.
  4. Leave a tablespoon of oil in the wok. Fry ginger and chilli till fragrant. Add salted vegetables and fry for a while. Add tomatoes and fry till tomatoes soften.
  5. Add hot water and return the pan-fried seabass to the wok to simmer in the sauce.
  6. Season with fish sauce and pepper.
  7. ⁠Enjoy while it’s hot!
