Ingredients
1 Australian Broccoli
1 Cod Fish Fillet
Handful of Goji Berries
1 Tomato
1-2 tbsp of Minced Garlic
2-3 tbsp of Sesame Dressing
1-2 tbsp of Fish Sauce
½ Cup of Chicken Stock
1-2 Coriander Stalk
2-3 tbsp of Sambal Chilli Paste
3-4 Dashes of Salt
3-4 Dashes of White Pepper
1 Lime

Method
1. Prepare the Broccoli:
- Wash and cut the broccoli into small florets.
- Bring a pot of water to a boil and season lightly with salt, pepper, and oil.
- Add the broccoli and boil for 4–5 minutes. Once tender, drain and transfer to an ice bath. Set aside to cool.
2. Cook the Cod Fish:
- Heat oil in a pan over medium-high heat and season the pan with salt and pepper.
- Pan fry the cod fish fillet on all sides until golden brown.
3. Prepare the Sauce:
- Soak the goji berries in hot water until softened. Chop them and set aside.
- Dice the tomatoes and pound the coriander root.
- In a heated pan, stir-fry the minced garlic, tomatoes, coriander root, sambal chilli paste, chopped goji berries, and chicken stock.
- Season with fish sauce and sesame dressing. Let the sauce simmer and reduce over medium heat.
4. To Serve:
- Arrange the broccoli around the cod fish on a plate.
- Drizzle the sauce over the fish.
- Garnish with coriander and a squeeze of lime.
