Chocolate Chip Bread

260g All-Purpose Flour
½ tsp Sea Salt
1 tsp Baking Soda
130g Dark Chocolate Chips (or Semi-Sweet)
2 Large eggs
160g Dark Brown Sugar
25g Fine White Sugar
230ml Buttermilk
70ml Vegetable Oil
1 tsp Vanilla Paste* (or pure vanilla extract)

  1. Mix sugar and eggs with a whisk in a large bowl until creamy. Add vanilla paste, buttermilk and oil. Stir in dry ingredients slowly, to prevent clumps.
  2. Grease a loaf tin with softened butter, or line it with waxed baking paper. Fill it with the chocolate chip bread mixture.
  3. Bake in a preheated oven at 175°C for 25 mins, testing halfway with a skewer to ensure that the centre is cooked.
  4. Serve the chocolate chip bread warm with a scoop of ice-cream of your choice, and garnish with flakes of sea salt.
