1 tbsp Mayonnaise
2 tbsp Smoked Paprika
2 tbsp Garlic Powder
2 tbsp Chilli Powder (optional)
1 block of Feta Cheese, crumbled into small bits
2 sprigs Coriander, roughly chopped
1 Lime, cut in wedges
Salt & pepper to taste
- Cut each corn cob lengthways, so you get 4 long “rib” strips per cob. Add them to a plate and microwave for 3.5 mins on high or in additional 30 sec intervals until cooked. Alternatively, you can cook the corn in a pot of boiling water for 5 – 7mins or until cooked.
- Heat a pan over high heat. Sear each corn rib for 20 – 30s on each side or until desired char doneness. Let it cool for 3 mins.
- Brush mayo evenly on the corn ribs and sprinkle each rib with salt/pepper, crumbled feta, garlic powder, paprika/chilli powder in respective order, making sure to coat them as evenly as possible.
- Garnish with some chopped coriander and lime juice. Enjoy!
