Cumin Grilled Lamb Chops

Ingredients

1 kg (approx) Lamb Chops
1 Carrot (cut into chunks)
1 kg Potatoes (cut into chunks)
1 Onion (cut into wedges)

MARINADE FOR LAMB CHOPS
1 tbsp (approx) Salt
Few Dashes Black Pepper
Few Dashes Onion Powder
Few Dashes Cumin Powder
Few Dashes Chilli Powder
Few Sprigs Rosemary

SEASONING FOR VEGETABLES
1 tbsp Cooking Oil
½ tbsp Salt
Few Dashes Cumin Powder
Few Dashes Black Pepper

Method
  1. Pat dry the lamb chops and marinate them with salt, black pepper, onion powder and rosemary.
  2. Cut potatoes and carrots into chunks. Parboil them to 80% doneness.
  3. Put potatoes, carrots, onion and garlic onto a baking tray. Season the vegetables with salt, black pepper, cumin powder and oil. Mix well.
  4. Liberally sprinkle cumin powder and chilli powder onto lamb chops. Heat up a grill pan. Pan-sear the lamb chops and render out the excess fat on the edges.
  5. Place the lamb chops on top of the vegetables and put the tray into the preheated oven at 200℃ for 30 mins. Turn the lamb chops and stir the vegetables at the halfway mark for even cooking. Cooking time depends on the thickness of lamb chops, your oven and your preferred doneness.
