Dried Mushrooms
wash & soaked in the water overnight. Reserve the water

How to cook

Prepare Thai Chilli Dipping

  • Pound garlic,chilli padi and corriander stem in a mortar and pestle.
  • Add brown sugar and pound until dissolved.
  • Add fish sauce and lime. Well mix.

Start steaming Clam & Prawn

  • Steam clam and prawns

Prepare Seared Japanese Scallop with XO Sauce

  • Pat dry scallop with kitchen towel. Sprinkle it with sea salt.
  • Heat up the pan until it is very hot.

Start cooking Seared Japanese Scallop with XO Sauce

  • Add oil. Drop the scallops and sear the scallops for 2 mins each side. Serve with iceberg lettuce and shredded carrot. Top each scallop with XO sauce.

Start cooking Lobster Rolls with Siracha Mayo

  • In a pan, add oil and garlic.
  • Season lobster with salt and pepper. Sear it until is cooked. Do not overcook.

Assemble & serve Lobster Rolls with Siracha Mayo

  • Mix all the sauce ingredients in a small bowl.
  • Combine the lobster and sauce.
  • Spread the lobster mixture over the bread. Garnish with tobiko and chives.

Start cooking Thai Prawn Cakes

  • Pan fry with oil or air fry Thai prawn cakes until golden brown.

Assemble & serve Thai Prawn Cakes

  • Serve with sliced cucumbers and thai dipping sauce.

Prepare Wasabi Soy Sauce Bay Scallops & Grilled Prawns serve with Korean Laver Cracker

  • Mix the bay scallops with sauce mixture.

Assemble & serve Wasabi Soy Sauce Bay scallops & Grilled Prawns serve with Korean Laver Cracker

  • To assemble, prepare one cracker, perilla leave and add the bay scallop and grilled prawn.

Start cooking Braised Sea Cucumber, Abalone and Mushroom.

  • Add the oil into a wok on high heat.
  • Turn the heat to medium and add the garlic and ginger in to cook for 30 seconds or until fragrant.
  • Turn the heat back up to high and add the mushrooms in. Stir fry them for 2 minutes.
  • Add the sea cucumber and stir for another 2 mins. Add the oyster sauce, 2 tablespoon of the can liquid, salt and sugar. Mix for another 2 min.
  • Add the shaoxing wine and pour in the reserve mushroom water.
  • Quick stir and cover the wok.
  • Bring to boil over a low heat.
  • Add the abalones and let it simmer for another 2 mins and serve.
