How to cook
Prep & Boil Potatoes
  • Peel and large-dice the potatoes.
  • Boil potatoes in salted water for 12 minutes or until soft.
  • Strain.
Flavor & Mash Potatoes
  • In a blender, puree the burrata cheese, cream and 1/4 cup olive oil.
  • Using a hand mixer, blend the cooked potatoes.
  • Add the burrata mixture, along with the butter, to the potatoes. Blend until smooth.
  • Season with salt, fold in 1/4 cup grated parmesan cheese, and drizzle with additional olive oil if desired.
Garnish Potatoes
  • Plate the potatoes and garnish with 1.5 tbsp extra virgin olive oil, chopped chives and 1 tbsp of grated parmesan cheese.
