Potatoes | 4 |
Burrata Cheese | 455 g |
Extra Virgin Olive Oil | 1⁄3 cup |
Cream | 5⁄8 cup |
Unsalted Butter | 2 tbsp |
Salt | 2 tsp |
Parmesan Cheese | 1⁄3 cup |
Fresh Chives | 1 tbsp |
How to cook
Prep & Boil Potatoes
- Peel and large-dice the potatoes.
- Boil potatoes in salted water for 12 minutes or until soft.
- Strain.
Flavor & Mash Potatoes
- In a blender, puree the burrata cheese, cream and 1/4 cup olive oil.
- Using a hand mixer, blend the cooked potatoes.
- Add the burrata mixture, along with the butter, to the potatoes. Blend until smooth.
- Season with salt, fold in 1/4 cup grated parmesan cheese, and drizzle with additional olive oil if desired.
Garnish Potatoes
- Plate the potatoes and garnish with 1.5 tbsp extra virgin olive oil, chopped chives and 1 tbsp of grated parmesan cheese.
