Egg Yolk | 2 |
Sugar | 80 g |
Fresh Milk | 250 ml |
Whipping Cream | 250 ml |
Vanilla Extract | 1 tsp |
How to cook
Step 1
- Crack 2 eggs into a mixing bowl, add in egg yolks, sugar, milk and cream, then whisk the mixture
Step 2
- To achieve that silky-smooth texture for your custard egg, sieve the mixture a few times
Step 3
- Pour the mixture into ramekin, and place the ramekin on a baking tray. Add in water on the tray for even tender texture
Step 4
- Bake in oven for 30 minutes at 180℃, and chill in refrigerator until cold.
Step 5
- To serve, sprinkle a thin layer of sugar all over the custard sugar, then caramelize it in oven or with a kitchen torch.
