Dashi
3 tbsp
Mirin
1 tsp
Soy Sauce
1 tsp
Sugar
2 tsp
Salt
(to your liking)
Seaweed Flakes
(to your liking)

How to cook

Step 1

  • Whisk the eggs in a bowl

Step 2

  • In a separate bowl, combine the seasonings (Dashi, mirin, soy sauce, sugar, salt) and mix well

Step 3

  • Pour the seasoning mixture into the bowl of eggs and whisk gently

Step 4

  • Heat the pan over medium heat. Dip a folded paper towel in oil and apply it to the pan so that the pan is evenly coated in oil

Step 5

  • Pour a thin layer of egg mixture into the pan and tilt the pan so that the mixture coats the entire cooking surface of the pan

Step 6

  • Once the bottom of the egg mixture has set, start rolling the egg from one side of the pan to the other

Step 7

  • Move the rolled omelette to the side of the pan where you started to roll. Use the paper towel dipped in oil to coat the pan again

Step 8

  • Repeat steps 5-7 until you have finished the egg mixture

Step 9

  • Remove from pan and slice it into pieces with your preferred thickness. (If you want to set its shape further, use a bamboo sushi mat before slicing it!)
