Almond Flour | 120 g |
All Purpose Plain Flour | 180 g |
Olive Oil any neutral oil | 150 ml |
Granulated White Sugar | 80 g |
Salt | tsp |
Baking Soda | 1 tsp |
Baking Powder | 1 tsp |
Almond depends on how big your cookies are | 35 pieces |
How to cook
Prepare
- Preheat the oven to 180 degree celsius
- Combine all the dry ingredients with a spatula or stand mixer, if you are using the stand mixer, mix on low medium speed with the beater attachment
- Add oil and mix until a cohesive dough forms
- The dough should be able to hold its shape when you try to roll into a ball, if they look crumbly, add 2-3 teaspoons of vegetable oil at one time
- Weigh the dough to make 10-20g (depending on the size of cookie you want) rounded portion and roll it into a ball with your palms
- Place it on a baking sheet lined with parchment paper and repeat until all the dough has been used up
- Optional but highly recommend, hold the cookie on your palm and gently press the almond into the dough
- Beat the egg in a small bowl and lightly brush the top of the cookie with the egg yolk
Start baking
- Bake at 180C for 15-20 minutes or until cookies are slightly brown
Assemble & serve
- Let it cool and enjoy
