roughly chopped, for garnish

Lime Juice
for garnish

How to cook

Prepare the corn

  • Cut each corn cob lengthways, to get 4 long “rib” strips per cob.
  • Add the corn ribs to a plate and microwave for 3-5 minutes on high or in 30-second intervals until cooked.
  • Alternatively, you can cook the corn in a pot of boiling water for 5-7 minutes or until cooked.
  • Heat a pan over high heat then sear each corn rib for 20-30 seconds on each side or until desired char doneness.
  • Let it cool for 3 minutes.

Assemble and serve

  • Brush mayonaise evenly on the corn ribs.
  • Sprinkle each rib with salt, pepper, crumbled feta, garlic powder, and chilli powder (in the respective order), making sure to coat them as evenly as possible.
  • Garnish with some chopped coriander and lime juice, then enjoy!
