How to cook
Step 1
  • Cut each corn cob lengthways, so you get 4 long “rib” strips per cob.
Step 2
  • Add them to a plate and microwave for 3.5 mins on high or in additional 30 sec intervals until cooked. Alternatively, you can cook the corn in a pot of boiling water for 5 – 7 mins or until cooked.
Step 3
  • Heat a pan over high heat. Sear each corn rib for 20 – 30s on each side or until desired char doneness. Let it cool for 3 mins.
Step 4
  • Brush mayo evenly on the corn ribs and sprinkle each rib with salt/pepper, crumbled feta, garlic powder, paprika/chilli powder in respective order, making sure to coat them as evenly as possible.
Step 5
  • Garnish with some chopped coriander and lime juice. Enjoy!
