Chicken Breast cut into chunks | 100 g |
Sweet Potato peeled and chopped | 300 g |
Unsalted Chicken Stock | 200 ml |
Onion chopped | 50 g |
Frozen Peas | 40 g |
Carrot medium sized (approx 60g), peeled and chopped | 1 |
Apple small sized, peeled and chopped | 1 |
Sunflower Oil | 1 tbsp |
How to cook
Start cooking
- Heat the oil in a saucepan and sauté the onion for 3-4 minutes until softened.
- Add the chicken to the pan and sauté for 3-4 minutes.
- Add the carrot, sweet potato, apple and chicken stock, then bring it to a boil.
- Simmer, covered with a lid, for about 12 minutes or until the chicken is cooked through and the vegetables are tender.
- Add the frozen peas and simmer for another 3 minutes.
- Purée in a blender to the desired consistency.
