Razor clams | 500 g |
Oil | 1⁄3 cup |
Garlic | 1 clove |
Vermicelli (soaked) | 40 g |
Light soya sauce | 1⁄2 tbsp |
Shaoxing wine | 1 tbsp |
Sesame oil | 1 tbsp |
Pepper | 1⁄8 tsp |
Sugar | 1⁄4 tsp |
Chicken stock | 2 tbsp |
Red chilli (deseeded and diced) | 1 |
Cilantro (optional to garnish) |
How to cook
Step 1
- Use a sharp knife, cut along the top seam of the razor clam to separate the flesh from the shell
Step 2
- Remove the flesh from the shell
Step 3
- Cut and discard the dark intestinal tract
Step 4
- Set aside in the fridge until you are ready to cook
Step 5
- Mix light soya sauce, shaoxing wine, sesame oil, pepper, sugar and chicken stock in a bowl
Step 6
- Heat up the pan, pour in oil and fry minced garlic until fragrant
- Strain and set aside
Step 7
- Add a layer of vermicelli on the shells followed by the razor clam meat
- Sprinkle minced garlic and diced chilli on top
- Steam for 4 minutes
Step 8
- Garnish it with cilantro and serve!
