Fish Patty Burger

Ingredients

250g Fillet Seabass
Sesame Oil
Pepper
1 tsp Seasoning Powder
Handful of Sweet Corn
1 Egg (55–60g)
35g Breadcrumbs
2 tbsp Spring Onions
2 tbsp Mayonnaise
Grated Ginger
Chopped Parsley (optional)

Method
  1. Cut the filleted fish into cubes and set aside.
  2. Make the batter for the fish patty:
    • Add the corn, chopped onion, egg, parsley (optional), breadcrumbs, mayonnaise, ¾ tsp grated ginger, ¾–1 tsp seasoning powder, pepper and sesame oil to the fish. Mix to combine.
  3. Shape the fish patties:
    • Form small patties from the fish mixture and set aside.
  4. Cook the fish patties:
    • Add a little oil to the heated pan. (For perfectly round patties, you may use compartmented egg frying pan.)
    • Sauté the fish patties until they are golden brown, approximately 3–4 minutes a side.
    • Set aside once cooked.
  5. Prepare the burger buns.
  6. Add lettuce and sliced cheese, then top with a fish patty. Spread mayo or ketchup (according to your preference) and serve.
