Grilled Chicken Pita

For Hummus:
1 can of Cooked Chickpea/Garbanzo Beans
60ml of Lemon Juice
60ml of Tahini
30ml of Extra Virgin Olive Oil
30ml of Water
1 clove of Garlic
1 tsp of Salt
A dash of Paprika Powder

For Grilled Chicken:
2 pcs Boneless, Skinless Chicken Breast OR Boneless Chicken Thigh
½ cup of Mayonnaise
1 tbsp of Minced Garlic
2 tsp of Mixed Herbs
1 tsp of Salt
1 tsp of Black Pepper

For Pita Filling:
1pkt (4-5 pcs) of Pita Bread
½ small Red Onion (Sliced Thinly)
1 small Avocado (Diced)
1 cup of Baby Spinach
1 cup of Cherry Tomatoes (Sliced into halves)
1 cup of Cooked Chickpea/Garbanzo Beans
1 tbsp of Extra Virgin Olive Oil
1 tsp of Black Pepper
1 cup of Greek Yoghurt
1 small Lemon

  1. Combine all ingredients for grilled chicken and marinate for 2hours or overnight then grill on high heat for 6-8mins on each side. Once cooked, set aside for 5mins before slicing them to thick slices.
  2. Combine all ingredients for hummus in a food processor and blend till it becomes a fine paste. Adjust the consistency with the amount of water and adjust the spiciness with the amount of paprika powder.
  3. In a mixing bowl, combine sliced red onion, cherry tomatoes, chickpeas with extra virgin olive oil and black pepper, then set aside.
  4. Grill the pita bread lightly and spread some hummus on one side. Add in baby spinach, sliced grilled chicken, chickpea mix and diced avocado.
  5. Add in 1-2 tbsp of Greek yoghurt and drizzle some lemon juice over the ingredients and dish is ready to serve.
