Honey Garlic Tiger Prawns with Congee

Ingredients

200-300g of Tiger Prawns
1 Packet of Eloasis Mini King Oyster Mushroom
1 Packet of Dragon Chives
1 Bag of Original Doritos
6-7 Cloves of Garlic
2-3 Shallots
1 Cup of Milk
2- 3 tbsp of Soy Sauce
1-2 tbsp of Fish Sauce
2-3 tbsp of Hot Honey
5-6 Dashes of Black Pepper
Butter
Cooking Oil 

Method
  1. Preparation 
    • Slice the garlic, shallots, mini king oyster mushrooms, and chives.
    • Set aside, reserving a small portion for later use.
  2. Prepare the Doritos Congee
    • Crush a bag of Doritos until finely crumbled, keeping some whole pieces aside for garnish.
  3. Stir Fry Vegetables
    • Heat oil in a pan and add a knob of butter.
    • Add the sliced vegetables and stir-fry until soft and fragrant.
    • Pour in 1 cup of water and 1 cup of milk.
    • Add the crushed Doritos and braise until the chips soften and thicken into a congee-like texture.
  4. Prepare the prawn 
    • Butterfly and devein the prawns, then pan-fry them.
    • Add butter, black pepper, and the reserved vegetables (shallots, mushrooms, and garlic), and allow to simmer over low heat.
    • In a bowl, mix the soy sauce, fish sauce, and hot honey to make the glaze.
    • Pour the glaze over the prawns and let it simmer for about 2 minutes.
  5. Plate and Serve! 
    • Spoon a bed of Doritos congee onto a plate and top with the prawns and stir-fried vegetables.
