Keto Friendly Coconut Hojicha Muffin

Ingredients

2 Eggs
20g Coconut Oil/ Melted Butter
110g Coconut Milk
30g Sweetener
40g Coconut Flour
A pinch of Hojicha Powder

½ tsp Baking Powder
20g Coconut Flakes, plus some extra for toppings

Method
  1. Preheat the oven at 180°C.
  2. In a bowl, whisk egg, coconut oil, milk and sweetener. Add in the rest of the ingredients, mix well.
  3. Scoop the mixture evenly into 6 muffin cups, topped with some coconut flakes.
  4. Bake 170°C 15 mins.
