Korean-style Broiled Red Snapper

Ingredients

1 Red Snapper (around 600g)
½ tsp Sea Salt
Few slices Lemon
3 tbsp Korean Chilli Paste
1 tbsp Soy Sauce
2 tsp Sugar
1 clove Garlic (minced)
2 slice Ginger (grated)
1 tsp Sesame Oil
1 stalk Spring Onion
½ tsp Sesame Seeds

Method
  1. Clean & pat dry the red snapper. Snip off fins & tail.
  2. Sprinkle & rub sea salt on both sides of the fish.
  3. Set the fish on a slightly oiled wire rack over a dish of shallow water with a few slices of lemon.
  4. Preheat oven using broil mode for 15 mins.
  5. Place the oven rack on the top 1/3 of the oven. Place the fish on the rack & broil for 12-15 mins.
  6. Flip the fish onto the other side & broil for another 10 mins.
  7. Meanwhile, combine remaining ingredients for sauce with 1 tbsp hot water & stir into a paste.
  8. Place fish onto a serving dish, then spread the chilli paste onto the fish. Best served warm.
