Lemongrass Pork

Ingredients

800g Pork Collar (sliced)
1 stalk Lemongrass
3 cloves Garlic
2 cloves Shallots
1 tbsp Brown Sugar
2 tbsp Fish Sauce
2 tbsp Dark Soya Sauce
Pinch of Salt & Pepper
1 tbsp Oil

Method
  1. Finely chop the lemongrass, garlic and shallots (you may use a food processor).
  2. Mix all the ingredients in a ziplock bag, together with the pork.
  3. Refrigerate for at least 1 hour.
  4. When ready to cook, add 1 tbsp of oil to a pan, then fry the pork slices. Depending on the thickness of the pork slices, it may require 1 to 2 minutes of cooking on each side.
