Minced Pork Rice Paper Rolls

Ingredients

1 Packet of Minced Pork
1 Ripe Avocado
1 Packet of Vietnamese Rice Paper
1 Lemon
1-2 tbsp of Fish Sauce
1-2 tbsp of Soy Sauce
1 tbsp of Dark Soy Sauce
1 tbsp of Sesame Oil
2-3 Dashes of Salt
2-3 Dashes of White Pepper
1 bowl of short grain rice
2-3 tbsp of Rice Wine
Spring Onions
Cooking Oil
Mayonnaise (Optional)

Method

1. Prepare the Ingredients
Slice the cucumber, avocado, and spring onions, then set them aside.
Squeeze some lemon juice and drizzle it over the avocado to prevent oxidation.
Heat oil in a pan and add the minced pork with rice wine. Season with fish sauce, soy sauce, dark soy sauce, salt, pepper, sesame oil, and spring onions. Fry for another 2–3 minutes, then set aside.

2. Wrapping the Rolls
Lightly soak one piece of rice paper in water until it turns transparent, then place it on a plate or tea towel.
Add a piece of seaweed, rice, cucumber slices, avocado slices, and minced pork.
Wrap and roll it into a spring roll-like shape.

3. Pan Fry the Roll
Add oil to a pan and pan fry the rolls until they turn golden brown.
Drain the excess oil on a kitchen towel before serving.

4. Plate, drizzle mayonnaise and serve!
