Ingredients
1 Seabass Fish, descaled and cleaned
1 tbsp Fish Sauce
2 tsp Sugar
½ tsp Pepper
3 tbsp Corn Starch
Handful of Fried Garlic
2 stalks Spring Onion (chopped)
1 Red Chilli (chopped)
3 stalks of Basil Leaves
Method
- Marinate seabass with fish sauce, pepper and sugar for at least 1 hour.
- Pat dry the fish and coat it with some corn starch before frying. Heat up some oil in a frying pan, use a kitchen towel to pat dry the basil leaves and fry them until they curl up. Set them aside. In the same pan, use medium to medium high heat to pan fry the fish until it is golden brown and crispy.
- Sprinkle fried garlic, spring onion, chilli and basil leaves on top of the fish. Serve with steamed rice!
