Peach Gum Dessert

150g Peach Gum
1 bundle Pandan Leaves
1 pc Snow Fungus
10 pcs Red Dates, seedless
30g Dried Longans
1 tbsp Wolfberries
100g Brown Rock Sugar (adjust accordingly to your liking)
2.2 litres Water

  1. Soak Peach Gum overnight till soft and remove impurities
  2. Soak snow fungus till soft and cut off the hard stem
  3. In the pot, bring water till boil and add in pandan leaves and red dates, simmer for 15 mins
  4. Add in Peach Gum & Snow Fungus and simmer for another 10 mins
  5. Next, add in brown rock sugar and stir till dissolve
  6. Off heat and add in dried longans and wolfberries and cover with lid
  7. Serve hot or chilled and enjoy
