Ingredients
1 Threadfin Fillet (about 200g)
30g Unsalted Butter
2 tbsp Garlic (minced)
20ml White Wine
1 tsp Dried Chilli Rings
1 tbsp Olive Oil
¼ cup Water
Pinch of Salt
Pinch of Black Pepper
1 Lemon Wedge
1 stalk Parsley (chopped)
Method
- Season the threadfin fillets with a pinch of salt and pepper. Allow to marinate for 30 minutes.
- In a hot pan, heat olive oil and place the threadfin skin-side down. Sear until brown. Add butter, sliced chilli and minced garlic to the side of the pan.
- Flip the fish and cook the flesh side for 1 minute, allowing the garlic to become fragrant.
- Drizzle white wine into the pan to evaporate the alcohol, then add a splash of water. Cover the pan and simmer on low heat for 3–5 minutes, or until the fish is fully cooked. Season with additional salt and pepper to taste.
- Plate the fish, garnish with freshly chopped parsley, and serve with a lemon wedge. Enjoy your meal!
