Poached Threadfin with Garlic Butter Sauce

Ingredients

1 Threadfin Fillet (about 200g)
30g Unsalted Butter
2 tbsp Garlic (minced)
20ml White Wine
1 tsp Dried Chilli Rings
1 tbsp Olive Oil
¼ cup Water
Pinch of Salt
Pinch of Black Pepper
1 Lemon Wedge
1 stalk Parsley (chopped)

Method
  1. Season the threadfin fillets with a pinch of salt and pepper. Allow to marinate for 30 minutes.
  2. In a hot pan, heat olive oil and place the threadfin skin-side down. Sear until brown. Add butter, sliced chilli and minced garlic to the side of the pan.
  3. Flip the fish and cook the flesh side for 1 minute, allowing the garlic to become fragrant.
  4. Drizzle white wine into the pan to evaporate the alcohol, then add a splash of water. Cover the pan and simmer on low heat for 3–5 minutes, or until the fish is fully cooked. Season with additional salt and pepper to taste.
  5. Plate the fish, garnish with freshly chopped parsley, and serve with a lemon wedge. Enjoy your meal!
