Ingredients
600g Prime Pork Ribs
½ Orange (sliced)
3 Shallots (coarsely chopped)
2 cloves Garlic (coarsely chopped)
1 stalk Coriander Root
MARINADE
2 tbsp Ginger (grated)
2 tbsp Cooking Wine
1 tbsp Oyster Sauce
2 tbsp Soya Sauce
1 tbsp Sesame Oil
2 tbsp Egg
1 tbsp Corn Starch
SEASONING
2 tbsp Rock Sugar
2 tbsp Tomato Sauce
2 tbsp Soya Sauce
2 tbsp Cooking Wine
1 cup Fresh Orange Juice
Method
- Marinate the prime ribs for at least 4 hours or preferably overnight in the fridge.
- Sear the prime ribs in a hot wok or frying pan till golden brown. Set aside.
- Leave about 2 tbsp of oil in the wok, caramelise the rock sugar and add in the seared prime ribs. Lower the heat and stir well to coat the ribs with the caramelised sugar.
- Add in the chopped garlic, shallots, coriander roots and seasoning. Stir well till aromatic. Pour in sufficient hot water to cover all the ribs and simmer for about an hour or till ribs are soft. If necessary, add more hot water when sauce dries up. (Tip: To shorten cooking time, transfer the ribs to a pressure cooker or rice cooker for simmering.)
- Add in the sliced oranges and cook for another 3 minutes.
