Salmon Pepper Rice

Ingredients

300g Norway Salmon Fillet
2 cups Cooked Rice
100g Broccoli Florets
50g Corn Kernels
10g Butter

SAUCE
1 tbsp Minced Garlic
3 tbsp Light Soya Sauce
2 tbsp Water
½ tsp Sugar
1 tsp Ground Black Pepper

Method
  1. Preheat the air fryer to 200ºC.
  2. Cut the salmon into cubes and marinate with pinch of salt and pepper for 10 mins.
  3. Spray some oil on the salmon and air-fry it for 8 mins.
  4. Boil a small pot of water and blanch the broccoli for 2 mins and the corn for 1/2 min.
  5. Boil the ingredients for the sauce in a saucepan for 2 mins.
  6. Arrange the rice in the middle of a plate, add the cooked salmon, broccoli and corn.
  7. Drizzle the sauce over the rice, and add some green onions as well. Top it off with more ground black pepper.

Alternatively, if you have a cast iron pan, you do not need to air-fry the salmon. Heat up the cast iron pan, and add the cooked rice with the raw salmon; you can stir-fry it just like in the restaurant!
