Sambal Selar

Ingredients

3 (about 500g) Ikan Selar
1 tsp Turmeric Powder
Salt (to taste)
½ Brown Onion (julienned)
3 tbsp Sambal Tumis (homemade or store bought)
Tamarind Paste (dissolved in water, to taste)
Salt (to taste)
Sugar (to taste)
Calamansi

Method
  1. Pat dry the selar, then rub turmeric and salt all over both sides.
  2. In a frying pan, heat 1 tbsp of oil over medium heat, pan-fry the selar for about 5–8 minutes on each side, depending on the size of the fish. Remove and set aside.
  3. In the same pan, heat 1 tbsp of oil, sauté onions till slightly translucent and add in sambal tumis.
  4. Add in tamarind juice, salt and sugar (adjust taste to preference).
  5. Spoon the sambal tumis onto the pan-fried selar, and serve with calamansi.
