Ingredients
270g+/- (1 piece) Delicato Beef Sirloin
10g Unsalted Butter
Method
- Choose your preferred marinade when you purchase the beef sirloin at the Delicato counter. (I opted for “The BBQ Favourite” seasoning.)
- Prepare a container suitable for your sous vide machine, and fill it with water. Select 59°C (or use your sous vide machine’s preset mode for steak).
- Put the beef steak into the water when the temperature reaches 59°C.
- Cook the steak sous vide for an hour.
- Remove steak from the water bath.
- Heat a grill pan and add in the butter. Sear the steak for a minute on all sides.
- Let the steak rest for 5 minutes before slicing.
