Spaghetti with Salmon and Pesto Genovese

350g Barilla Spaghetti n.5
190g (1 jar) Barilla Pesto Genovese
300g Fresh salmon
1 tbsp Extra virgin olive oil (EVOO)
Salt & White pepper
Fresh basil*

  1. Cut the fresh salmon into cubes and season with salt and white pepper.
  2. Heat a pan, add a tbsp of EVOO and slightly fry the salmon then set aside.
  3. As per instructions on pack, cook the Spaghetti in salted boiling water until al dente.
  4. Before draining the Spaghetti, remember to set aside a cup of cooking water.
  5. Drain the Spaghetti, and mix with the Pesto adding a little cooking water to better stir the ingredients.
  6. Mix well, then add the salmon cubes.
  7. Should you wish, garnish with basil.
