Steamed Fish with Eggs and Goji (Wolfberries)

Ingredients

1 Egg (beaten)
100ml Water
A pinch of Salt
1 tbsp Hua Diao Wine
120g Toman Fish Fillet (sliced)
1-2 tsp Light Soya Sauce
1 tbsp Shallot Oil

GARNISHING
A spoonful of chopped Spring Onions
A spoonful of Fried Shallots
A spoonful of Wolfberries

 

Method
  1. Combine beaten egg with water, salt and hua diao wine. Mix well and set aside.
  2. Marinate fish slices with light soya sauce and place them in a steam plate/bowl.
  3. Sieve the egg mixture into the steam plate/bowl (to remove any bubbles). Cover with cling wrap and poke some holes using a toothpick.
  4. Heat up water in a steam pot and steam on medium high heat for approximately  5 minutes, then reduce heat to low and continue to steam for another 8-10 minutes.
  5. Once done, add in goji, spring onions and fried shallot with oil. Lastly, drizzle light soya sauce and serve hot.
