Steamed Grey Mullet with Preserved Sour Plums

Ingredients

1 Medium Grey Mullet about 450g
3 Sour Plum
20g Ginger (julienned)
6 slices Ginger
1 stalk Spring Onion
1 stalk Coriander
1 tsp Cooking Oil

SEASONING (to taste)
2 tbsp Light Soy Sauce
½ tbsp Brown Sugar
1 tbsp Hua Tiao Wine
3 tbsp Water

Method
  1. Clean the fish (you can ask the fishmonger to do it) and wash it. Score a few lines on the fish in order to let it cook slightly faster.
  2. Fry ginger with oil until fragrant, add seasoning, bring it to simmer for 2 minutes, set aside.
  3. Insert 3 slices of ginger in the fish stomach and lay 3 slices of ginger on top of the fish. Arrange 3 salted sour plums on the fish.
  4. Steam fish at high heat for 10 minutes (depending on the size).
  5. When the fish is cooked, discard the cloudy fish liquid on the plate. Pour the sauce over the fish, garnish with spring onion and coriander.
