Taiwanese Braised Beef

Ingredients

600g Delicato Beef Brisket (cut into chunks)
1 Onion (cut into wedges)
2 Tomatoes (cut into wedges)
3 Carrots (roll cut)
5 sliced Ginger
1 bulb Garlic (halved)
5 Shallots (crushed)
3 Bay Leaves
½ tbsp Szechuan Peppercorn
1 Cinnamon Stick
2 Star Anise
3 stalks Spring Onion (cut into sections)
2 Red Chilli (de-seeded)
6 Dried Chilli
1.5L Water

3 tbsp Chilli Bean Sauce (豆瓣酱)
2 tbsp Oyster Sauce
1 tbsp Soya Sauce
1 tbsp Sugar
2 tbsp Hua Tiao Wine
Pinch Pepper

1 stalk Coriander
2 stalks Spring Onions (chopped)

Method
  1.  In a large pot, sauté garlic, ginger and shallots until fragrant. Add the onion, star anise, cinnamon, bay leaves, Szechuan peppercorn, red chilli, dried chilli and spring onions. Fry for 3 minutes or until onion is soft.
  2. Add beef and give it a quick stir-fry. Combine carrots, tomatoes, all the seasoning and water. Bring it to boil.
  3. When it boils, turn down the heat to cook with lid on until the beef is soft and tender.
  4. Garnish with spring onions and coriander. Serve with noodles or rice.
