Ingredients
600g Delicato Beef Brisket (cut into chunks)
1 Onion (cut into wedges)
2 Tomatoes (cut into wedges)
3 Carrots (roll cut)
5 sliced Ginger
1 bulb Garlic (halved)
5 Shallots (crushed)
3 Bay Leaves
½ tbsp Szechuan Peppercorn
1 Cinnamon Stick
2 Star Anise
3 stalks Spring Onion (cut into sections)
2 Red Chilli (de-seeded)
6 Dried Chilli
1.5L Water
3 tbsp Chilli Bean Sauce (豆瓣酱)
2 tbsp Oyster Sauce
1 tbsp Soya Sauce
1 tbsp Sugar
2 tbsp Hua Tiao Wine
Pinch Pepper
1 stalk Coriander
2 stalks Spring Onions (chopped)
Method
- In a large pot, sauté garlic, ginger and shallots until fragrant. Add the onion, star anise, cinnamon, bay leaves, Szechuan peppercorn, red chilli, dried chilli and spring onions. Fry for 3 minutes or until onion is soft.
- Add beef and give it a quick stir-fry. Combine carrots, tomatoes, all the seasoning and water. Bring it to boil.
- When it boils, turn down the heat to cook with lid on until the beef is soft and tender.
- Garnish with spring onions and coriander. Serve with noodles or rice.
