Thai Mango Sticky Rice

1 Large ripe mango skinned & sliced*
1 cup Sticky/glutinous rice
1¼ cup Water
1 cup Coconut milk
2 tbsp Sugar
¼ tsp Salt

*Available at your nearest FairPrice store.

  • Sticky rice
    1. Rinse rice under cold water till it becomes clear
    2. Add rice & water into the rice cooker & let it stand for 30 minutes
    3. After 30 minutes, cook your rice & water in the rice cooker
    4. Once cooked, leave the rice to sit for 5 minutes
  • Coconut sauce
    1. Start preparing the sauce
    2. Boil coconut milk, sugar, and salt together
    3. Bring it to a simmer by lowering the heat until the sauce has thickened & sugar dissolved
    4. While waiting, fluff the rice with a rice paddle.
    5. Once the sauce has been cooked, pour in ¾ of it into the rice
    6. Mix it together for 10 minutes to allow the rice to absorb the coconut sauce
  • Serving
    1. Assemble the rice with sliced mango & spoon the remaining sauce over
    2. Serve it while hot
