Thai Style Steamed Fish

Ingredients

1 Whole fish / 2 slices of fish meat  (600-800gm)
6 stalks Spring onion (sliced into halves)
3 slices Ginger
4 tbsp Sea salt
2 tbsp Minced Garlic
1 tbsp Crushed Red Pepper
1 tbsp Lemongrass (finely chopped)
1 tbsp Sugar
2 tbsp Chinese parsley (chopped)
2 slices Thai lime (for garnish)
Pinch of Basil leaves

Method
  1. Wash all the ingredients and let them dry.
  2. Prepare a steaming pot and pre-boil water with it.
  3. Once you have cleaned your fish, add 3 slices of ginger on top of the fish and steam for 3 mins using high heat. This is to get rid of any fishy smell.
  4. Meanwhile, minced the garlic, ginger, lemongrass and set aside.
  5. In a heated pan, add minced garlic, crushed red pepper, Basil leave and sugar, stir fry for 30 secs and leave in a bowl
  6. In a separate bowl, combine the remaining ingredients and leave the Lime slices for garnishing.
  7. In a new plate transfer the fish over and pour all the ingredients (steps 5 and 6) on top of the fish. Steam for 12 mins and add the Lime slices as garnishes.
  8. Ready to serve!
