Ingredients

100g Baby Spinach greens
50g Purple cabbage
30g Purple carrot*
50g Blackberries
50g Black Seedless Grapes
25g Pomegranate*
2 Medium, hard boiled eggs (sliced)
½ Avocado, sliced
50g Yellow capsicum
Pumpkin seeds to taste
Mixed nuts to taste

Salad dressing:
2 tbsp Lemon juice
2 tbsp Extra virgin olive oil
1-2 tbsp Raw honey
A pinch of salt
A pinch of pepper

Method
  1. Arrange salad ingredients on the platter
  2. Mix the salad dressing ingredients in a jar with lid, shake vigorously and drizzle the dressing on the salad platter.
