Cafes offering artisanal burgers have been steadily introducing their gourmet fares to Singaporeans all over the island, with gourmet prices to match. But why go for pricey burgers when you can whip up a stack of perfection right in your own kitchen?

The following recipes are simple enough for the average home cook to hack and elevate to a luxe, palatable dish!

Waygu Indulgence

If you're a fan of Wagyu marbling and the more luxurious cuts of meat, you're going to love this one. We're talking about a tender, juicy fillet of hand-chopped Wagyu, topped with a slab of pan-seared foie gras. Toss in a truffle-infused portobello mushroom for earthiness, and drizzle aged balsamic glaze to add a little tang to the mix. Piece everything together with a buttery brioche bun, and you've got a proud tower of meaty indulgence ready.

Good Ol' Bacon & Cheese

Take it back to the old school favourite – the bacon and cheese pairing that’ll bring you back to the memories of your school days. This time, cut out the day-old grease and cheap mince that is typical of fast food joints, and add homemade Apple Bacon Jam to your burger. There’s nothing quite like a basic burger done well to transport you back into the years.

Rosemary Lamb Burger

Rosemary and lamb are one of the classic combinations that just work. Tantalise those taste buds with a herbed lamb patty, accented with the nutty bitterness of wild rocket and cut through with a tangy feta yogurt sauce. Laden with fresh herbs and spices, this is a winning burger bound to leave you satisfied.

 

Wagyu Indulgence
Makes 4 servings

Preparation time: 15 minutes

Cooking Time: 20 minutes

Ingredients

For patty:

Wagyu Sirloin, minced 500g
Egg 1
Red onion 1
Breadcrumbs 50g
Salt ½ tsp
Black Pepper ½ tsp

For toppings:

Foie Gras 200g
Big Portobello Mushrooms 4
Whole Black Truffles
Salt and Pepper to Taste

For aged balsamic glaze:

Aged Balsamic Vinegar 4 tbsp
Extra Virgin Oil 2 tbsp
Salt and Pepper to taste
Brioche Burger Buns 4

Directions

  1. For aged balsamic glaze, whisk balsamic vinegar and extra virgin olive oil until emulsified. Add salt and pepper to taste. Set aside.
  2. Preheat oven to 230 degrees Celsius.
  3. Rub salt and pepper into the gills of the portobello mushrooms. Bake gill-side up in the oven for 12-15 minutes. Remove and set aside.
  4. Heat up a skillet until smoking point
  5. Score the foie gras on both sides and pan sear on a very hot, dry skillet or pan for 30 seconds on each side. Remove and set aside to rest.
  6. In a large bowl, mix all the ingredients for the patty using your hands. Ensure it is well-mixed throughout.
  7. Form mixture into 4 thick patties.
  8. Lightly oil the grill and cook patties for 5 minutes on each side, or until well done.
  9. Assemble the burger, shaving slices of the black truffles over the patty before sandwiching it between the buns!

 

 

Bacon Cheese Burger
Makes 4 servings

Preparation time: 10 minutes

Cooking Time: 30 minutes

Ingredients

For patty:

Minced Beef, with at least 20% fat 500g
Streaky Bacon, chopped 160g
Egg Yolks 2
Breadcrumbs 50g
Black Pepper ½ tsp
Barbecue Sauce 2 tbsp
Salt and Pepper to taste

For apple bacon jam:

Streaky Bacon 250g
Red Onions 2
Apple Compote 150g
Sharp Cheddar Cheese 4 slices
Brioche Burger Buns 4

Directions

  1. Slice red onions for apple bacon jam.
  2. Chop apple into small cubes
  3. In a separate pan, fry the bacon until crisp. Remove bacon and leave the grease in the pan.
  4. Add the sliced red onions and apple cubes in the pan. Saute until soft.
  5. Add bacon back into the pan and leave to cook on low heat.
  6. Preheat your grill on high heat
  7. In a large bowl, mix all the ingredients for the patty using your hands. Ensure it is well-mixed throughout.
  8. Form mixture into 4 thick patties.
  9. Lightly oil the grill and cook patties for 5 minutes on each side, or until well done.
  10. Remove apple bacon jam from the pan.
  11. Assemble your burger!

 

 

Rosemary Lamb Burger
Makes 4 servings

Preparation time: 10 minutes

Cooking Time: 10 minutes

Ingredients

For patty:

Leg of Lamb, minced 600g
Breadcrumbs 60g
Fresh Rosemary Leaves, chopped 10g
Salt 1 tsp
Black Pepper 1 tsp
Lea & Perrins Worcestershire Sauce 1 tbsp
Extra Virgin Olive Oil 1 tbsp
Egg 1

For topping:

Wild Rocket 100g

For feta-yogurt sauce:

Greek Yogurt ½ cup
Feta Cheese 90g
Lemon Juice 1 tbsp
Dried Oregano 1 tbsp
Fresh Mint Leaves ½ cup
Salt and Pepper to taste
Sesame Burger buns 4

Directions

  1. Combine greek yogurt, feta cheese, lemon juice and dried oregano in a bowl. Mix well and season with salt and pepper to taste.
  2. Fold in mint leaves, slightly crushing them to release flavour. Set the sauce aside for serving.
  3. Preheat your grill on high heat
  4. In a large bowl, mix all the ingredients for the patty using your hands. Ensure it is well-mixed throughout.
  5. Form mixture into 4 thick patties.
  6. Lightly oil the grill and cook patties for 5 minutes on each side, or until well done.
  7. Assemble your burger!
