Five-Cheese Mac & Cheese

As a general rule of thumb, tastier cheeses yield tastier mac and cheese. In other words, don’t feel beholden to the exact number of cheeses or the types of cheeses given in this recipe. Instead, use this recipe as a base and add your favourite cheeses in order to get a mac and cheese dish with flavours you can truly appreciate. If the thought of so much cheese sounds a little too rich for your taste, serve it with some basil pesto on the side for a jolt of acidity.

 

Five-Cheese Mac & Cheese
Makes 2-4 servings

Preparation time: 10 minutes

Cooking Time: 35 minutes

Ingredients

Milk 500 ml
Water 1 litre
Salt 1 tbsp
Macaroni 250 g

For sauce:

Unsalted Butter 100 g
Plain Flour 100 g
Grated Cheese (mozzarella, gruyere, edam, sharp cheddar, Parmesan, Emmenthal, blue — or any combination of your desired cheeses) 200 g
Milk 700 ml
A Pinch of Nutmeg
Ground Black Pepper ½ tsp
Salt to Taste

For topping:

Grated Parmesan 20 g
Grated Mozzarella 20 g

To serve:

Basil Pesto (optional)

Directions

  1. Heat milk, water and salt in a large saucepan and bring to a boil. Watch it carefully as it may boil over. To prevent this, place a wooden spoon across the rim of the pot.
  2. Add the macaroni and lower the heat. Cook macaroni according to packet instructions.
  3. Drain the macaroni and reserve 500ml of the cooking liquid.
  4. To make the sauce, heat butter in a saucepan till it melts. Add the flour and whisk till smooth.
  5. Gradually add the cooking liquid, a little at a time, whisking constantly to prevent any lumps.
  6. Cook till it thickens slightly, then add the milk and whisk till smooth.
  7. Add the cheeses and stir with a wooden spoon till all the cheese has melted.
  8. Add nutmeg and black pepper. Stir and taste. Add salt according to taste.
  9. Preheat oven to 190°C.
  10. Place macaroni into a large bowl and stir the sauce through. Transfer to a large baking dish or individual baking dishes, and sprinkle with the Parmesan and mozzarella.
  11. Bake in the oven for about 25 minutes or until golden and bubbling. Serve with basil pesto, if using.

 

Lobster Mac & Cheese

 

In a pinch, prawns or crayfish are great alternatives to the lobster in this version of mac and cheese. The shellfish adds a sweet, briny lilt to the dish, taking it up a notch in terms of complexity.

 

Lobster Mac & Cheese
Makes 2-4 servings

Preparation time: 10 minutes

Cooking Time: 35 minutes

Ingredients

Milk 500 ml
Water 1 litre
Salt 1 tbsp
Macaroni 250 g
Cooked Lobsters, Shelled and Sliced 2

For sauce:

Unsalted Butter 100 g
Plain Flour 100 g
Grated Cheese Mozzarella 40 g
Grated Sharp or Aged Cheddar 60 g
Grated Parmesan 50 g
Milk 500 ml
A Pinch of Nutmeg
Ground Black Pepper ½ tsp
Salt to Taste

For topping:

Grated Parmesan 20 g
Grated Mozzarella 20 g

Makes 2-4 servings

Milk 500 ml
Water 1 litre
Salt 1 tbsp
Macaroni 250 g
Bacon, Sliced 150 g
Olive Oil 1 tbsp
Truffle Salsa 3 tbsp
Truffle Oil 2 tsp

For sauce:

Unsalted Butter 100 g
Plain Flour 100 g
Grated Cheese Mozzarella 40 g
Grated Gruyere 60 g
Grated Parmesan 50 g
Milk 500 ml
Ground Black Pepper ½ tsp
Salt to Taste

For topping:

Grated Parmesan 20 g
Grated Mozzarella 20 g
