A little like the sev and a little like the murukku, Rajapalyam sev, also known as the kara sev, is a generously spiced and fried snack from Tamil Nadu. Gram flour and rice flour are mixed and spiced with red chilli powder, pepper powder among others and fried to a golden colour. The kara sev is a popular tea-time snack and is generally made in Tamilian households during festivals like Krishna Janmashtami, Navaratri or Diwali. There are many varieties of kara sev that are distinguished based on the key spice used or the places they are made in.
