Freshly imported Grain Fed Beef Striploin from USA. Cut into a sizeable steak weighing approximately 250 grams. USA Choice is the second highest grade of beef awarded by the US Department of Agriculture (USDA), the certifying body for meats in the USA. It only remains second to USA Prime. USA Beef is evaluated by highly-skilled USA meat graders. Basically it is graded in two ways: quality grades for tenderness, juiciness and flavor; and yield grades for the amount of usable lean meat.
